✨Swahili Ndengu (Coconut lentils)✨
These lentils are cooked with coconut milk and vegetables. Presented with Kenyan Chapati, usually known as ‘Chapo’ ~ formula for those in past post😋
Formula 👇🏼
Fixings:
– 1 cup dry green lentils
– 1 onion (diced)
– 1 carrot (diced)
– 1/2 capsicum
– small bunch hacked spinach
– 2 green chillies
– 1/2 tin hacked tomatoes
– 1 tbsp tomato purée
– 3 tbsp oil
– 1 tsp tumeric
– 1 tsp garam masala
– salt to taste
– 1 tbsp ginger/garlic glue
– 1/2 would coconut be able to drain
Strategy:
– Wash and splash dry lentils for 30min-1 hr. At that point cook the lentils and keep to the side (I cooked them in the pressing factor cooker)
– In a dish, add oil, onions and salt and cook onions until brilliant
– Then include the ginger/garlic glue, hacked capsicum and carrot and cook for a couple of moments
– Add in tumeric, garam masala, tomatoes, tomato purée, chillies and spinach. Include a sprinkle of water and cook until the oil has isolated
– Then include the cooked lentils and water and stew for 5 minutes
– Add in coconut milk and stew for an additional 5 minutes. At that point include coriander and serve ☺️
